Cooking with Suha: A traditional Middle Eastern family meal

When visiting Suha's home you will be showered with kindness and Middle Eastern hospitality that you will immediately experience through the spacious and calming feeling of her home, and Suha's gracious and warm personality. You will learn to make Suha's rosewater sugar syrup that will be used for dessert with the Harissah. As the afternoon continues, you will learn to make traditional dishes from the Middle East influenced by Suha's family recipes. You will have the opportunity to help prepare and taste the layers of flavours and ingredients involved in each dish before you sit down together to share in this family meal.

Immersion Experience #1

Sheiriya (red noodle soup)

From the recipe book of Suha's mother in law, this is a light comforting and delicate noodle soup made with chicken broth and Arabic noodles.

Suniyat Dijaj

Another recipe from Suha's mother in law: A traditional Jordanian chicken dish, served with potatoes and aromatic spices including cumin and curry.

Tabouleh

There are many varieties of Tabouleh. In this workshop you will make Suha’s mother’s recipe, a typical Middle Eastern Tabouleh where the parsley is the star of the show.

Baba Ghanoush

Suha shares her family recipe for this delicious roasted eggplant and tahini dip.

Harissah with Rosewater Sugar Syrup

Suha's mother's recipe for her semolina and coconut cake drizzled with rosewater sugar syrup. A traditional Lebanese dessert.

What guests are saying about Suha's culinary exerpience:

"What makes this stand out from cooking classes is the real factor. You are breaking bread and learning about another culture in that family's home.”

Michelle H

"My husband and I attended Suha’s culinary experience and were both blown away by the experience. We shared stories, learned some of Suha’s cooking techniques and by the end of the night we felt like we had made a deep connection with new friends. The evening was so incredibly enriching and we can’t wait to try another one."

Christy A.

“I didn’t want our evening to end after spending time with Suha and her family. We felt so welcome and were immediately immersed in Suha’s culture and cuisine. My favourite parts of the experience were learning to make Suha’s Harissah cake, having the opportunity to meet her wonderful family and learning how to belly dance with Suha’s daughter! A memorable evening we won’t forget.”

Bio:

I was born and raised in the United Arab Emirates. I moved with my parents and siblings in 1990 to Jordan where I finished my degree and then got married. After living in Qatar where my husband was working, we moved back to Jordan where I had my eldest daughter.  In 2004 my family and I immigrated to Canada where I had my son and another daughter, in Surrey.

When did you develop your love for cooking?

My passion for cooking comes from my mom, and I want to give the same experience to my kids, so I love to make them food that is healthy, nutritious and traditional at the same time.

How would you describe Arabic Cuisine?

Arabic cuisine is rich with different recipes. Some dishes are intended to be cooked for a number of people because they are better served with company.  In the Middle East, it is very common to have large groups of friends over to share in a meal. My favorite Arabic dishes are Mulukhia, Mansaf, Maklouba, Malfoof and Saniyat jaj.

What other cultures have influenced your cooking?

Different cultures influence my cooking, especially that we live in a multicultural society.  I like the Indian cuisine for food enrichment with spices, Italian cuisine for its healthy and easy recipes, Japanese and Chinese cuisine for their seafood and western cuisine for its modern style of cooking.

What do you love most about cooking?

I love to eat delicious meals for that I love to cook delicious food.
