Next Raymond will have you making Bún Bò Huế , this popular Vietnamese noodle and meat soup is fit for a king, literally, Hué is a city in central Vietnam that is associated with the cooking style of the former royal court.

Raymond has chosen this dish as a nod to the ox as one of the key ingredients is beef.

What you need to buy:

1lb lean beef brisket
*1 pack "Cha Lua" a.k.a. "Vietnamese Pork Roll"
*1 pack "Bo Vien" Beef Balls
1 marrow bone per serving (optional)
2 Tbsp neutral cooking oil
*1 tsp achiote or annatto seed
1 tsp chili flakes
1 med cooking onion (size of a tennis ball)
*5 Stalks of lemongrass
*6 Tbsp Fish Sauce
*3 Tbsp Fine Shrimp paste
1 can neutral low sodium beef broth (Campbell0
1 can neutral low sodium chicken broth (Campbell)
*1 pack "Rau Hu ế" or Rau Que" a.k.a "Thai Basil"
