Leila especially created this menu to celebrate the Persian Winter Festival.   The Winter Festival (Shab-E-Yalda) takes place on and around the Winter Solstice (Dec 21st).  It is an example of the integration of natures rhythms of change and the lifestyle of Iranians.  On the eve of Shab-E-Yalda Family and friends would gather and sit all night around the korsi, and eat a variety of fruit and vegetables.  Now in many homes the Shab-E-Yalda is celebrated with elaborate banquets, poetry and stories.  Join Leila and IMK Founder Paula on Dec 20th, for a virtual taste of Shab-E-Yalda.  

This is a festive and delicious dish, the kooftehs (meatballs) are served with a honey and pomegranate dipping sauce.

    Pistachio and pomegranate meatballs. This beautiful dish is an easy crowd pleaser as an appetizer or served with the below salad and some Sangak Bread (Persian bread) for a family meal.

    Ingredient List
    Serves 4

    Koofteh Pesteh (Pistachio and pomegranate meatballs)
    1 C raw pistachio (ground)
    2 C chopped fresh parsley
    ½ C chopped fresh mint
    ½ C chopped fresh cilantro
    1 C chopped fresh tarragon
    2 pounds ground lamb
    1 medium onion
    ¼ C bread crumbs
    1 egg
    ½ C ghee or butter

    GLAZE:
    ½ C pomegranate molasses
    ¼ C honey
    ¼ C pomegranate juice

    GARNISH:
    2 Tbsp slivered pistachio
    ½ C pomegranate seeds
    ¼ C fresh chopped mint

    Khaiar-Annan (Cucumber and Pomegranate Salad)
    1 medium red onion
    1 bunch fresh mint
    6 Persian cucumbers
    2 pomegranates or 1 cup pomegranate seeds
    100 g feta cheese(optional)
    2 Tbsp slivered pistachio(optional)

    Dressing:
    Juice of 1 lime
    2 Tbsp olive oil
    1 tsp sea salt
    ½ tsp black pepper
    ½ tsp golpar ( Persian hogweed) optional

    Kitchen Equipment:
    Food processor or blender
    Large mixing bowl
    Small mixing bowl
    Non stick baking tray or include parchment paper
    Salad Serving Bowl

    What to Prep in Advance
    Wash your rice in a colander until the water runs clear.

    Have all your ingredients measured out and ready to go

    Sign up for your cooking class, price is by device so feel free to invite friends to join you in your kitchen or make it a family event. A day before your experience you will receive your zoom and recipe link.

    Cooking Instructions

    All online cooking classes include interactive cooking instruction and all of the recipes. After registration you’ll receive an email with your shopping list and equipment list. Also available when you sign up.

    Duration

    Online Cooking Classes are 1.5 hours in duration, and are co-hosted with In My Kitchen founder Paula Mohammed, on zoom.
