Taste the very first fruits of harvest! Intense bold notes of fresh artichoke, blanched almonds and a lingering warm green peppercorn finish. We are celebrating the harvest season with this exclusive, vibrant emerald, early-harvest extra virgin olive oil.

Novello – meaning fresh oil – is a limited edition and produced in extremely small quantities, where we intentionally sacrifice volume for quality. Made exclusively with early harvest Ogliarola Barese olives in Central Puglia. Intentionally chosen for their quality, harvested in September the olives are milled less than 8 hours from picking in a continuous cold extraction. The results are a well-balanced, high-antioxidant oil, with a complex herbaceous mouth feel, perfect for harvest dishes. Drizzle over cod en papillote with a squeeze of lemon, or as a finish over seafood pasta. Perfect to accompany a crudité platter, with whipped ricotta and focaccia, or carpaccio with parmesan and arugula. This oil is unfiltered and is best consumed within 6 months of harvest. Packaged to appreciate the oil's beautiful colour, please store the bottle in the box provided, as excessive light will cause olive oil to spoil.

It is recommended on delicate dishes to exalt their flavors, especially on raw fish, roast or steam fish, crustaceans and molluscs in appetizer, delicious prime dishes, carpaccio and boiled vegetables.


Typically EVOO is bottled in dark glass as light is an element that can damage the olive oil.  Vignoli purposely bottled the Novello in clear glass bottle so you could see the bright emerald greed of the oil.  Please store your bottle in the decorative storage box that comes with your Novello


Mr.  Vignoli personally selects the olives, then finds a state of the art mill, to then create the oil. He mills it all himself, overseeing the process from start to finish. Before Mr. Vignoli launched this company he trained as a master miller and worked with producers to refine and use their mills to the best of their ability, all over the world.
Finding the olives and creating the oil from them, makes Mr. Vignoli unique and the oils extra delicious, as it’s his personal touch and care that makes the difference.
