Online experiences are 1.5 hours in duration with lots of time for questions and conversation. The online experiences are hosted on zoom.  If the dates don't fit your schedule, you are able to sign up and receive the recorded zoom the next day.  Please indicate in "notes" on your registration if you are signing up for the recorded zoom. 

Recipes:  recipes are sent to you along with your zoom event information the day before your online experience.  Ingredient lists are sent to you shortly after you register.

Technology:  connect with the host using zoom on your computer, mobile device or tablet.  If you have a tv in your kitchen try the screen mirroring feature on your device!

Immersion experiences are a 4 hour experience in the Host's home.  Includes a light snack upon arrival, approximately 2.5 hours of "in the kitchen" time, learning the recipes and participating in making the dishes, a full dinner shared together, and a booklet of recipes and in-depth culinary info.

All experiences are informal, warm and welcoming.  IMK experiences are suitable for families.

Cooking with Monica: Healthy Mexican

Monica, will share her traditional recipes and culture along with her expertise as a holistic nutritionist.   Monica is a dual citizen with Mexico and Canada, and goes back to Mexico regularly, where she has catered wellness retreats, made traditional mole with an elder in a small village and develops her passion and knowledge for Mexican food and culture.  When you cook with Monica you will walk away not only learning new recipes but also how to cook food that taste great, and is good for your body and mind.  Monica is the person behind Raiz Holistic Nutrition, where she believes in nutrition that "leads us to go back to our roots, to connect with the earth, to seek the knowledge of where our food comes from and identifying dis-ease from the root source, be it physical or emotional. "

Monica Online Experience #1

Cook with Monica in your kitchen, online via zoom.   A great activity to do with the whole family as it is price per device.  We may not be able to travel right now, but share a family experience learning about a new culture and cuisine with our online culinary adventures.

This is also a great opportunity to sample what our culinary adventures are all about without committing to the four hour immersion experience.   

After the 1 hr culinary adventure you are invited to linger online for another 30 minutes to chat with Melissa and other participants. 

Our online culinary experiences are moderated by In My Kitchen founder, Paula Mohammed.

Enchiladas and Chilaquiles (vegetarian options available i.e Jackfruit)

Enchiladas are corn tortillas around a filling with a chili pepper sauce and date back to Mayan times.  Monica's family recipe uses the small corn tortillas with  a chicken filling (a vegetarian options will be provided) and she serves them with a tomato style sauce that is used for both the enchiladas and chilaquiles.

Chilaquiles are a traditional Mexican dish often served for breakfast in order to use  up the day old tortillas.  The corn tortillas are fried and served in a salsa with lots of cheese!

Bio:

Where were you born and when did you come to Vancouver?

I grew up in Puerto Vallarta, Mexico, being a dual citizen, I wanted to explore my Canadian roots, I moved to Vancouver for University.

I hold an Undergraduate Degree in Communications from Simon Fraser University and I worked in Public Relations for four years. After some deep soul searching, I connected with what made me the happiest: making food for the people I love, and supporting them with their health goals. I sought to pursue my education as a Holistic Nutritionist and graduated with honours from the Institute of Holistic Nutrition. 

When and how did you develop a love for cooking?

Watching my Grandma; cooking was the way she showed her love.   This is where I learned to make chilaquiles, enchiladas and Tamales. 

How do you express your love for cooking and culture?

Cooking and food is my love language, this is how I show people I care.  I feed them and nurture them, I love integrating my culture into my meal plans for clients and showcasing that side.

What do you love most about cooking?

I love the creative aspect, and I love that it brings people together.

Do you have a cooking philosophy?

My approach is that nutrition leads us to go back to our roots, to connect with the earth, to seek the knowledge of where our food comes from and identifying dis-ease from the root source, be it physical or emotional.
