1/2 seedless English cucumber
1 Tbsp sea salt
2 cups plain Greek yogurt
2 Tbsp extra virgin olive oil
2 cloves garlic
6 large fresh mint leaves, stems discarded, plus 1 for garnish
¼ cup chopped fresh dill
Sea salt and cracked black pepper

Baked Feta

1 cup cherry tomatoes
½ cup Kalamata olives, pitted
¼ small red onion
2 garlic cloves
¼ cup extra virgin olive oil
2 tsp lemon juice
2 tsp chopped fresh oregano leaves
1 tsp sea salt
1/2 tsp cracked black pepper
1 lbs block feta cheese

Spanakopita Triangles

1 package of Phyllo pastry
1 small yellow onion
4 cloves garlic
2 Tbsp extra virgin olive oil
1 tsp sea salt
6 cups fresh baby spinach, stems discarded
1/2 cup heavy (35%) cream
1/2 tsp cracked black pepper
Pinch of freshly grated or ground nutmeg
3/4 cup crumbled feta cheese

What to prep in advance:

Make sure your Filo pastry is thawed and if using frozen spinach, make sure it is completely thawed and squeeze out the excess water.
Wash and trim your vegetables/herbs but not chopped
Have all your ingredients "mise en place", this means measured out ready to go.
