Kuku Sabzi - Herb frittata
A traditional Persian frittata with loads of greens and eggs. Pair it with feta cheese and walnut, and you will have the most delicious "fruit" (frittata).
Mirzaghasemi - Eggplant & tomato stew/dip
This is a traditional dish from Northern Iran/Caspian Sea region.
For the Kuku
2 bunches each: Parsley, mint , Dill
1 medium onion
1-1/2 tsp Turmeric
Salt and pepper to taste
Oil for cooking
For the Mirzaghasemi
3 Long eggplants a.ka. Japanese eggplant (or zucchini)
4 cloves Garlic
salt and pepper to taste
3-4 Tbsp vegetable or olive oil
2 Non-stick pans one with a lid (a regular pan with a lid works too)
Food processor helpful, but not necessary
