2 Tbsp rosewater
½ C Fresh/frozen blueberry plus extra for garnish
2 C Rosé wine or champagne/sparkling wine
Baked Brie with nuts, bharat spice and saffron
1 small wheel Brie cheese
1 C chopped pistachio, pecan, cashew, almond (mix of all four nuts or one kind only for a total of 1 C)
1 tsp saffron thread (soaked in ¼ C hot water) this will make more than you need, but the saffron water will keep.
¼ C barberry
1 Tbsp rosewater
*1 Tbsp bharat spice
2 Tbsp honey
2 phyllo sheets
2 Tbsp butter

Tamarind stuffed eggplant
1-2 eggplant (depends on the size,)
2 garlic cloves (grated)
1 C fresh cilantro (chopped)
¼ C pecan chopped
1 Tbsp Tamarind paste soaked in hot water, or 1 Tbsp Tamarind concentrate
2 Tomatoes (thinly sliced)
Olive oil to sauté
Salt and pepper to taste
2 champagne or wine glasses
Tin foil for lining trays
2 Baking trays

What to prep in advance:
Prep your saffron water
If using Tamarind paste, soak it in about 1/4 C hot water (do not throw out the water this is the part that we use.
Have all your ingredients "mise en place", this means measured out ready to go.
