Syrian Street-Style Hand Pies - Ingredient List

Ingredient List

Makes 24 small hand pies

The Pastry:

2 ¾ Cup sifted cake and pastry flour
2 tsp baking powder
1 tsp sea salt
1 cup butter, room temperature or slightly chilled
1 egg
1 Tbsp white vinegar
2 Tbsp cold water (may need more)

We have separated out the below ingredient lists as you will want to portion them out separately for each filling.

Cheese Filling

1 1/2 red onions
3 garlic cloves
6 Tbsp Harissa infused olive oil
3/4 C full-fat, Greek-style thick yogurt
*3 Tbsp za'atar
3/4 C cherry tomatoes
2 1/4 C crumbled feta cheese

Beef Filling (Sfeehas or Fatayer)

1 1/2 red onions
3 garlic cloves
2/3 C extra virgin olive oil
3/4 lb extra-lean ground beef
*3 Tbsp Aleppo Spice
*3/4 Tsp Aleppo pepper
2/3 C Pomegranate dark balsamic vinegar
1 1/2 Tbsp lemon juice
3/4 C full-fat, Greek-style thick yogurt
2/3 C Tahini
Sea salt and cracked black pepper

*These spices are typical to Syrian and Middle Eastern cooking.  They can be easily found at a Middle Eastern grocer and in many supermarkets.  Aleppo Spice is a mix of spices that make up this common Middle Eastern spice.  

IMK also offers spice and olive oil boxes for these classes.  The boxes contain the olive oils, vinegars, Aleppo Spice, Aleppo pepper, Tahini and za'atar.  The cost of the kit is $15 and is available for curbside pickup in Vancouver or shipping for a flat fee of $15.  We need 3 days notice for curbside pick up and 5 days for shipping within BC, 7 days for outside of BC.  Please email:  info@inmykitchen.ca if you would like a spice and olive oil box.

Whisk
2 knives (to cut butter into flour)
Measuring cups
Fork
Spatula
Rolling pin
pizza cutter or sharp knife (to trim rolled out dough)
2 Baking sheets covered with parchment paper
Pastry brush or spoon
2 med size fry pans (to cook the fillings at the same time but separately)

What to Prep in Advance:

Have your ingredients measured out and ready to go this is referred to as "mise en place"
