Lohikeitto (Finnish Salmon Soup)

Ingredients
500 g/1,1 lb salmon, skinned and cut into large chunks *
10-12 small new potatoes, leaving the skin on *
- 3 carrots, peeled and sliced into coins
- 1 onion, thinly sliced
- 1 leek, thinly sliced, washed
1 L good quality fish stock, vegetable stock or water*
- Salt
1-2 Tbsp Butter
1/4 tsp white pepper*
- 1/2 tsp allspice or whole allspice berries
- 1 bay leaf
1 c heavy cream
- Plenty of fresh dill, finely chopped
- 1 lemon, cut into 4 wedges
Directions
Melt a piece of butter in a medium pot and over medium sauté the thinly sliced leek and onion.
Saute until translucent but not brown. Add the stock, if not using, water. Add the potato, carrot, bay leaf, allspice, and white pepper, stir.
Boil (with lid on) for 10-15min until potatoes begin to soften. Add the salmon on top of the boiling vegetables, making sure the fish is covered with liquid and sprinkle salt on top.
Gently boil the fish until ready; resist the urge to stir too requently as it will break apart the fish.
Add the cream to the soup and stir gently, not boil.
- Heat through, check the flavour and add more salt if needed. Lastly add the dill.
Serve with rieska/crusty bread, butter and lemon wedges. If desired squeeze some lemon onto your soup.
Recipe Note
Fish
Salmon is my favourite, but snapper, halibut or cod work great too. You need a fish that will not flake apart.
Potatoes
I prefer the small new potatoes with skin on. The original recipe uses large potatoes peeled cut into chunks.
Fish Stock
I have made this with fish stock and with water. I find it is much better with a good quality fish stock. The stock I get is only 750ml so I add water as well to bring it to roughly 1 L.
Cream
I use only about 1/4 C of cream,.
White Pepper
White pepper has a distinct flavour, we used it a lot in New Zealand and the smell brings back memories of steamed potatoes with mint at my Grandparents home. White pepper is also used frequently in Vietnamese cooking as IMK Host Raymond has shared with me. You can find white pepper in most grocery stores or Asian grocery stores.
