Selena's Great Grandmother's Ukrainian "Put Together Cake"

Note: Selena highly recommends increasing the icing to 1.5 x or doubling it.

Ingredients
1 C Sugar
- 2 Eggs
- 1 C Thick sour cream (not low fat)
- ½ -¾ tsp Baking soda
- Pinch of Salt
- 1 tsp Vanilla
- 1 ½ C Flour (½ for rolling out dough, do not use pastry flour)
2 C Icing sugar
- ½ C Sour cream
3-4 Tbsp Cocoa
- 1 tsp Vanilla

Pre-heat oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper
- Beat the sugar, eggs and sour cream, and then add the rest of ingredients and beat well. Chill dough for 1 hour and then divide into 6-8 pieces.
- Roll dough out into ¼ “ thick oval shapes, these will rise a bit after rolling out and will be roughly 8.5”x 11”.
- Place pieces on parchment and bake for 8-10 minutes. Do not let them brown, they are ready when the underside just starts to go golden brown. Let cool to room temperature.
Icing and Layering
- Mix all ingredients together, and layer between cake pieces, the top layer does not have icing. Chill so the icing sets, and then serve at room temperature. Can be frozen.
