Taryn's Finnish Salads: Kurkkusalaatti (Cucumber) & Tomaatti-sipulisalaatti (Tomato and Onion Salad)

Ingredients
4 medium tomatoes,any variety, keep in mind beefsteak are larger than roma so adjust accordingly. If using a larger variety I like to remove the seeds in some of them
- 1 medium white onion
- Oil vinegar dressing
- Fresh dill to taste
- 1 tbsp wine vinegar
- 3 tbsp neutral oil
- ¼ tsp white sugar
- Salt and pepper to taste
- 2 cucumbers, field cucumbers preferably
- 1/2 cup dill, fresh
- 1/2 cup white vinegar
- 1/4 cup white sugar
- 2 cups water

Directions
Tomaatti-sipulisalaatti (Tomato and Onion Salad)
- Chop tomatoes in coarse chunks and thinly slice the onion. Toss together in a serving bowl.
- In a separate bowl whisk together dressing. Pour dressing over tomatoes and toss, adjust seasoning if required. Sprinkle with fresh chopped dill if desired. Chill for about an hour before serving.
Kurkkusalaatti (Cucumber Salad)
- If using field cucumbers, peel completely. If using English cucumbers, feel free to leave the skin on or peel. Thinly slice the cucumbers. Roughly chop the dill and place the cucumber and the dill in a bowl.
- Heat water and sugar, stirring to dissolve the sugar. Once the sugar is dissolved, remove from the heat and add the vinegar. Cool to room temperature, pour over the dill and cucumbers, stir. Refrigerate for approximately 2 hours. The leftovers will keep for about 1 week.
- To serve, use as a topping for open face sandwiches, in a salad, a small accompaniment to a meal or completely on its own as a salad.
