Ingredients
4 egg whites at room temperature
1 ½ c berry sugar
1 tsp vanilla essence
1 tsp white vinegar
1 Tbsp cornstarch
Directions
Pre-heat oven to 400℉ and cut out a piece of parchment paper to the shape and size you want your pavlova. Place parchment on a baking sheet. Normally I do a 9” diameter circle.
Beat egg whites until stiff, Add 1 cup of sugar 1 tsp at a time, beating after each teaspoon. Pour in remaining sugar. Beat and quickly add vinegar, vanilla, and cornstarch. Beat.
Place on parchment paper and shape as desired
Put in oven at 400℉ and reduce heat to 250℉ after 5’.
Bake for 1 ¼ hours.
Decorate with whipped cream (add 2 tsp sugar and ½ tsp vanilla essence to cream while beating it) and fresh fruit.
