This recipe is from my Great Grandma, from the New Zealand side of my family. If you prefer your cookies more crispy, then let them stay in the oven for 15 mins at 350 instead of 10 mins.
I encourage you to embrace "tea time", sit down with a morning cuppa and a biscuit and enjoy the moment.
Ingredients
1 egg
3 oz butter
1 C sugar less 2 Tbsp
1 C flour plus 2 Tbsp
1 tsp baking powder
4 tsp cocoa powder
1 C peanuts shelled and if you prefer lightly roasted
Directions
Pre-heat oven to 400℉
Beat butter and sugar to a cream. Add egg, beat. Add remaining ingredients and beat until combined.
Using a Tbsp form into balls place on a buttered and floured cookie sheet. Flatten slightly with a fork.
Bake in a hot oven at 400℉ for 5 minutes, then turn down oven to 350℉. Cook for 10 minutes.
Let cool on a wire rack and enjoy.
