Emily shares recipes from her cookbook:  Syria, Recipes for Olive Oil and Vinegar Lovers.   Hand pies are a perfect grab and go food.  Pack this Syrian street food favourite in lunches or in picnic baskets. (excerpt from Emily's cookbook:  Syria).  

Emily will show you a quick and easy pastry that can be used for sweet or savoury pies.  You will learn to make two fillings.

  • Cheese Hand-Pie Filling
    Olive oil pairing: Harissa infused olive oil

    Beef Hand-Pie Filling
    Vinegar pairing: Pomegranate dark balsamic vinegar

    Technology: Connect to your host on zoom using your computer, tablet or mobile device. Your zoom link will be sent to you the day before your cooking class.

    Class Involvement: We love to hear from you, so please chime in with questions. Public classes have 4-20 participants, to ensure everyone is able to ask questions. Private cooking events can have up to 497

    Classes require a minimum of 4 connections to be held.

    Ingredient List
    Makes 16 small hand pies

    The Pastry:

    4 Cup sifted cake and pastry flour
    2.5 tsp baking powder
    1.5 tsp sea salt
    1.5 cup butter, room temperature or slightly chilled
    2 egg
    1.5 Tbsp white vinegar
    2.5 Tbsp cold water (may need more)
    1 egg (egg wash)

    We have separated out the below ingredient lists as you will want to portion them out separately for each filling.

    Cheese Filling

    1 red onion
    2 garlic cloves
    4 Tbsp Harissa infused olive oil (or regular extra virgin olive oil)
    1/2 C full-fat, Greek-style thick yogurt
    2 Tbsp *za'atar
    1/2 C cherry tomatoes
    1 1/2 C crumbled feta cheese
    Sea salt and pepper

    Beef Filling (Sfeehas or Fatayer)

    1 red onion
    2 garlic cloves
    1/4 C extra virgin olive oil
    1/2 lb extra-lean ground beef
    2 Tbsp **Aleppo spice
    1/4 C Pomegranate dark balsamic vinegar (or regular balsamic vinegar)
    1 Tbsp lemon juice
    1/2 C full-fat, Greek-style thick yogurt
    1/4 C tahini
    sea salt and cracked black pepper

    *Za-atar is a common Middle Eastern spice found in many grocers and your local Persian / Middle Eastern Grocer.
    ** Aleppo spice is a seven spice blend common in Middle Eastern cooking, it is also referred to as Bharat spice.

    Kitchen Equipment:
    Large mixing bowl
    Small mixing bowl
    Whisk
    2 knives (to cut butter into flour)
    Measuring cups
    Fork
    Spatula
    Rolling pin
    Pizza cutter or sharp knife (to trim rolled out dough)
    2 Baking sheets covered with parchment paper
    Pastry brush or spoon
    2 med size fry pans (to cook the fillings at the same time but separately)

    What to Prep in Advance:
    Have your ingredients measured out and ready to go.

    Butter at room temperature

    If you cancel two weeks before your cooking class you will receive a full credit, which you can apply to another cooking class. After that, for in-person classes you may send someone else in your place (we ask you to notify us in advance if you're doing this). For online cooking classes you are welcome to transfer your spot to someone else. In the rare event that an instructor needs to cancel last minute, guests will receive a full refund. We do not otherwise offer refunds.

    How It Works

    Join on Zoom

    Sign up for your cooking class, price is by device so feel free to invite friends to join you in your kitchen or make it a family event. A day before your experience you will receive your zoom and recipe link.

    Cooking Instructions

    All online cooking classes include interactive cooking instruction and all of the recipes. After registration you’ll receive an email with your shopping list and equipment list. Also available when you sign up.

    Duration

    Online Cooking Classes are 1.5 hours in duration, and are co-hosted with In My Kitchen founder Paula Mohammed, on zoom.
