Asparagus risotto

  • 400 g (2 c) Arborio rice (Italian rice variety)
  • 1 onion 
  • 1.5 litres (6 c) broth (chicken broth)
  • 1 bunch asparagus 
  •  150g Parmigiano-Reggiano 

Cotolette di pollo

  • 4 chicken cutlets 
  • 65 grams flour (1/2 cup)
  • 2 eggs
  • 80 grams (1 ½ cups) fine breadcrumbs
  • 5 tablespoons grated parmigiano

Insalata di rucola (arugula salad)

  • 1 big bunch of arugula
  • Lemon juice or red wine vinegar (1/2 lemon or 2-3 Tbsp vinegar)

What you need from your pantry or to purchase:

150 mL (2/3 C) white wine 
Butter approx 4-6 Tbsp
Olive oil (for risotto)
Salt and pepper
Sea salt (for arugala salad)
Good quality olive oil for the salad
