Learn to make this beautiful rice dish traditionally served for celebrations alongside saffron marinated chicken.

Leila will take you through each step of the dishes in this fully interactive online cooking class.  Along the way you will hear stories from Leila's life in Rasht Iran and her journey to Canada.  Rasht has been voted by Unesco as the most creative gastronomy city.

Named for its gem stone colours, a great dish for the holiday season

Saffron Marinated Chicken
A simple and flavourful dish, marinated in spices, saffron and yogurt.

Technology: Connect to your host on zoom using your computer, tablet or mobile device. Your zoom link will be sent to you the day before your cooking class.

Class Involvement: We love to hear from you, so please chime in with questions. Public classes have 4-20 participants, to ensure everyone is able to ask questions. Private cooking events can have up to 497

Ingredient List
Serves 4

Saffron Chicken
3 tablespoons olive oil
4-5 cloves of garlic, peeled and sliced ( more garlic makes it more delicious)
4 pieces chicken, breasts and thighs
1 teaspoon turmeric
1/4 teaspoon cinnamon
1 teaspoon salt, or more to taste
1/2 teaspoon pepper
1 or 2 fresh limes, juiced
1 tablespoons sugar, adjust to your taste
2 tablespoons of brewed saffron ( or more)
½ C Greek yoghurt
1/2 cup barberry
1/4 cup pistachio sliver ( optional)

Jeweled Rice
3 C long white basmati rice
½ C barberries
¼ C sliced raw almonds
¼ C sliced raw pistachio
½ C golden raisins
2 large orange peeled (slivered)
2 large carrots, cut and in 2 inch thin strips
¼ C rose water
1 C oil, butter or ghee(divided in 2, ½ cups)
1 tsp ground saffron dissolved in 1/4 cup hot water
1 tsp ground cardamom
1 tsp cinnamon
2 Tbsp plus ½ C sugar
Salt to taste
Water for boiling the rice

Kitchen equipment
Large mixing bowl to mix chicken with marinade
Large sauté pan to cook chicken
Large pot to cook rice
Colander
Med fry pan
Clean dishtowel
2 Small bowls
1 small pot or fry pan
Large serving platter to hold rice and chicken

What to prep in advance
Wash rice in a colander until water runs clear

To remove the bitterness from orange peel, drop orange peel in a pot with boiling water and cook for 1 minute and rinse, repeat this 2 more times.

Have your ingredients measured out and ready to go.

How It Works

Sign Up

Sign up for your cooking class. On-line: price is by device so feel free to invite friends to join you in your kitchen or make it a family event.

All in-person classes are suitable for families. Max 6 spots, book all 6 and have your own private event.

Cooking Instructions

All cooking classes include tested recipes.

On-line: After registration you’ll receive an email with your shopping list, equipment list and zoom info.

In-Person: After registration you will receive the recipes and the address for your Host's home. 

Duration

Online Cooking Classes are 1.5 hours in duration, and are co-hosted with In My Kitchen founder Paula Mohammed, on zoom.

In-Person Cooking Classes are 3 hours long about 1.5-2 hours in the kitchen 1-1.5 hours sitting down and sharing the meal together.
